Dear Residents,
As the vibrant colors of fall begin to blanket our neighborhoods, we at Wake County Housing Authority welcome you to the Autumn 2025 Edition of our Community Newsletter. This season brings opportunities to reflect, reconnect, and prepare for the months ahead. "Fall is a season of change, and it's also a chance to reconnect- with nature, with neighbors, and with ourselves. We're proud to be part of a community that grows stronger together." We're excited to share updates, resources, and events designed to support and celebrate our residents.

Autumn Dish Recipe - "WCHA "Yummy Corner"

Rotisserie Roasted Chicken with Potatoes

Ingredients

  • 2 tablespoons olive oil
  • 4 teaspoons McCormick® PERFECT PINCH Rotisserie Chicken Seasoning
  • 6 bone-in chicken thighs, skin removed (about 2 pounds)
  • 1 1/2 pounds red potatoes, cut into 1-inch cubes

Instructions

  • Preheat oven to 425°F. Mix oil & Seasoning in a large bowl.
    Add chicken & potatoes; toss to coat well.
  • Place chicken & potatoes in a single layer on a foil-lined 15x10x1-inch baking pan sprayed with no-stick cooking spray.
  • Bake for 30 minutes or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
